การทำงานและประสิทธิภาพของโปรไบโอติก : การผลิตสารต้านเชื้อแบคทีเรีย สำหรับโปรไบโอติกแบคทีเรียที่ผลิตกรดแล็กทิก (lactic acid bacteria) เช่น Lactobacillus buchneri, Lactococcus lactis, Lactobacillus acidophilus, Lactobacillus fermentum และ Sterptococcus salivarius พบว่าสามารถยับยั้งการเจริญของเชื้อแบคทีเรีย Listeria innocua ได้ และมีการทดลองแยกเชื้อแบคทีเรียที่ผลิตกรดแล็กทิกจากลำไส้ของปลานิลนำมาทดสอบคุณสมบัติการผลิตสารต้านเชื้อแล้วพบว่าสามารถยับยั้งการเจริญของเชื้อแบคทีเรียกลุ่ม Aeromonas และ Vibrio ซึ่งก่อโรคในสัตว์น้ำได้อีกด้วย นอกจากนี้ ยังมีการศึกษาวิจัยเพิ่มเติมของประเทศมาเลเซียพบว่าโปรไบโอติกแบคทีเรีย Lactobacillus plantarum, Saccharomyces cerevisiae, Candida glabrata, L. lactis subsp. lactis และ Staphylococcus arlettae สามารถต้านเชื้อ Staphylococcus aureus และ Listeria monocytogenes ได้ สารที่โปรไบโอติกแบคทีเรียผลิตขึ้นมาและมีผลต่อเชื้อแบคทีเรียมีหลายชนิด เช่น แบคทีริโอซิน (bacteriocin) ไฮโดรเจนเปอร์ออกไซด์ (hydrogen peroxide) ไซเดอโรฟอร์ (Siderophores) ไลโซไซม์ (lysozyme) และโปรตีเอส (protease) เป็นต้น นอกจากนี้ กรดอินทรีย์และกรดไขมัน จำพวก lactic, acetic, butyric และ propionic ที่แบคทีเรียบางชนิดผลิตขึ้นมา อาจส่งผลให้ค่าความเป็นกรด (pH) ในระบบทางเดินอาหารของปลาลดลง มีผลให้เชื้อจุลินทรีย์ที่มีโอกาสก่อโรคเป็นเชื้อฉวยโอกาสไม่สามารถเจริญเติบโตได้ในระบบทางเดินอาหาร มีการศึกษาการให้โปรไบโอติกแบคทีเรียผสมอาหารแก่ปลานิลพบว่าช่วยกระตุ้นให้เกิดภูมิคุ้มกันแบบไม่จำเพาะซึ่งช่วยในการต้านทานการติดเชื้อ Edwardsiella tarda ได้ ทั้งนี้ สารที่โปรไบโอติกแบคทีเรียผลิตไม่ได้มีเพียงแค่สารที่มีฤทธิ์ต้านเชื้อแบคทีเรีย (Antibacterial activity) เท่านั้นแต่ยังมีสารที่มีฤทธิ์ต้านเชื้อไวรัส (Antiviral activity) และสารที่มีฤทธิ์ต้านเชื้อรา (Antifungal activity) อีกด้วย

Many probiotics that are commonly used in human and animals can produce antibacterial substances. Some can kill bacteria directly (bactericidal) and some can inhibit bacterial growth (bacteriostatic). For example: - Bacillus subtilis have been prove to help reduce Aeromonads, Pseudomonads and Coliforms bacteria in fish. - Bacillus licheniformis can be used to inhibit Vibrio growth in shrimp. - Lactococcus lactis produce substance(s) that can inhibit Aeromonas hydrophila, Aeromonas salmonicida, and Yersinia rukeri which are important bacterial pathogens in tilapia. - Bacillus pumilus and Bacillus firmus are probiotics bacteria that found in tilapia’s gut. They have shown antibacterial property against A. hydrophila under laboratory condition. - Lactic acid bacteria such as Lactobacillus buchneri, Lactococcus lactis, Lactobacillus acidophilus, Lactobacillus fermentum and Sterptococcus salivarius can inhibit Listeria innocu growth. - Lactic acid bacteria found in tilapia’s gut have been proved to have ability to inhibit Aeromonads and Vibrio bacteria that cause diseases in fish. - Moreover, there is a study in Malaysia showing that Lactobacillus plantarum, Saccharomyces cerevisiae, Candida glabrata, L. lactis subsp. lactis and Staphylococcus arlettae can inhibit Staphylococcus aureus and Listeria monocytogenes growth. Examples of antibacterial substances produced by probiotics are bacteriocin, hydrogen peroxide, siderophores, lysozyme and protease. In addition, some probiotics bacteria can produce organic acids and fatty acids, such as lactic, acetic, butyric and propionic acid. These acids lower pH in fish’s gut and prevent growth of opportunistic bacteria in fish’s stomach. There was study showing that probiotics mix with feed helps enhance non-specific immunity in fish and the fish were found to have better survival against Edwardsiella tarda infection. That’s not all. Probiotics do not only produce antibacterial substances!! They can also produce substances that have Antiviral and Antifungal activity.
