หลักเกณฑ์และวิธีการที่ดีในการผลิตอาหาร
หลายๆ ท่านเวลาไปเดินซื้อของกินตาม supermarket มักจะต้องสังเกตฉลากอาหาร วันที่ผลิต วันหมดอายุที่ติดไว้ที่ภาชนะหีบห่อแล้ว ก็จะต้องมองหาเครื่องหมายของ อย. หรือ สํานักงานคณะกรรมการอาหารและยา ด้วย เพื่อให้มั่นใจว่าอาหารที่ซื้อมาผ่านการอนุญาตจาก อย. แปลง่ายๆ ว่า อย. ได้ไปตรวจสอบอาหาร หรือผลิตภัณฑ์อาหารนั้นๆ จนถึงสถานที่ผลิตหรือนำเข้าแล้ว อีกนัยหนึ่งคือคุณภาพของผลิตภัณฑ์ก็ต้องเป็นไปตามเกณฑ์ที่กำหนดถึงจะได้รับเครื่องหมายของ อย. มาแปะบนภาชนะ ดังนั้น เมื่อเห็นเครื่องหมาย อย. เราก็เลือกซื้ออาหารได้อย่างวางใจมากขึ้น (แต่ก็ไม่ทั้งหมดนะคะเป็นเพียงหนึ่งในหลายๆ อย่างที่ต้องดูประกอบกันตอนเลือกซื้ออาหารนะ) ที่กล่าวถึงนี่คืออาหารสำหรับให้คนในประเทศเราบริโภคนะคะ ถ้าต่างประเทศเขาก็จะต้องมีหน่วยงานแบบ อย. มาตรวจสอบแบบนี้เหมือนกันว่ากระบวนการผลิตต้องเป็นไปตามเกณฑ์มีมาตรฐานและคุณภาพก่อนที่จะขายได้ หลักเกณฑ์และวิธีการที่ดีในการผลิตอาหารคือสิ่งสำคัญที่โรงงานผู้ผลิตอาหารต้องยึดถือและปฏิบัติ ภาษาอังกฤษที่ใช้เรียกแบบดูดีเลย คือ จี เอ็ม พี (GMP) หรือ Good Manufacturing Practice นี่เอง สิ่งนี้เป็นข้อกำหนดขั้นเบื้องต้นที่จะต้องควบคุมให้ปฏิบัติในการผลิตอาหาร เพื่อให้อาหารปลอดภัย มีการป้องกัน ลด กำจัดความเสี่ยงที่มีผลต่อกระบวนการผลิตที่อาจจะทำให้อาหารเป็นอันตรายต่อคนที่กินข้อกำหนดเหล่านี้จะครอบคลุมทุกด้านในการผลิต ยกตัวอย่างเช่น คุมกันตั้งแต่สถานที่ตั้งและอาคารผลิต ต้องอยู่ในที่สะอาดรักษาความสะอาดของสถานที่ผลิตอย่างสม่ำเสมอ มีการออกแบบให้ทำความสะอาดง่าย สะดวกต่อการทำงานแบ่งพื้นที่ทำงานเป็นสัดส่วน เครื่องมือ เครื่องจักร และอุปกรณ์ในการผลิตที่สัมผัสกับอาหารต้องทำจากวัสดุที่ไม่ทำปฏิกิริยากับอาหาร ทำความสะอาดง่ายมีการควบคุมกระบวนการดำเนินงานทุกขั้นตอนตามหลักสุขาภิบาลที่ดีตั้งแต่การตรวจรับวัตถุดิบ และส่วนผสมในการผลิตอาหาร การขนย้าย การจัดเตรียมการผลิต การบรรจุ การเก็บรักษาอาหารและการขนส่ง จัดทำบันทึกและรายงานผลการตรวจวิเคราะห์ผลิตภัณฑ์ชนิดและปริมาณการผลิตของผลิตภัณฑ์และวันเดือนปีที่ผลิต บุคลากรและผู้ปฏิบัติงานต้องมีสุขลักษณะที่ดี เป็นต้น ข้อกำหนดเท่าที่เล่ามาก็เห็นว่าเยอะแล้วใช่ไหมคะ แต่ก็ยังเป็นเพียงตัวอย่างเท่านั้น ในรายละเอียดปลีกย่อยยังมีอีกมาก ทีนี้พอจะเห็นภาพกันหรือไม่คะว่าอาหารที่มาจากระบบการผลิตที่ดีนั้นจะเป็นหนึ่งในปัจจัยสำคัญที่ทำให้ผู้บริโภคมั่นใจในคุณภาพได้แล้ว Smart farmer แบบเราสงสัยกันบ้างไหมว่า แล้วอาหารที่ให้สัตว์กินเนี่ย เวลาซื้ออาหารสัตว์ผู้ซื้อต้องดูอะไรบ้างมีระบบควบคุมคุณภาพมากน้อยแค่ไหน แบบเดียวกันนี้หรือเปล่าไว้ครั้งหน้าจะมาเล่าให้ฟังค่ะ
Principle and method in producing good quality food When you are buying food at the supermarket, everyone would be looking at the label for manufacturing date, expiration date and of course, a certified logo from “The Food and Drug Administration (FDA)”. This symbol will assure you that the quality and safety of this food product has been tested by the FDA. Not only the quality of the food itself that FDA checks, FDA also monitors manufacturing and import site, to make sure that we, the consumer will have safe and good quality products. So, make sure that you check for certified FDA logo before purchase any food product. What are the FDA looking for? When are needed to meet the standard? The principle of producing good food that all manufacturers need to adhere to is called “GMP” or “Good Manufacturing Practice”. GMP is a standard protocol aims to crate safe food and safe environment for food production. GMP also targets risks in all food production processes that are harmful to consumer. GMP standard involves everything in food production chain, from “location” to “transportation of product to market”. “Location” Food processing plant should be located in a tidy neighborhood. The building should be designed to be easily cleaned and should be routinely clean and disinfected. Working areas for each purpose should be separated. “Tool and equipment” should made of substances which do not react with the food and easy to clean. “Good sanitary” should be applied in every steps, such as importation of raw materials, any ingredients put in the food, processing, packaging, storage and transportation to the market. Moreover, all personnel involving in the food production are needed to keep good sanitation as well. ‘Record” All records are needed to be kept, such as quality tests, type and amount of production, manufacturing date, etc. These are just a “big picture” of making GMP.
